UPGRADED INSTANT RAMEN

INGREDIENTS

1/2 Tbsp cooking oil of choice

1 clove garlic, minced

1/2 cup onion

2 cups water

1 chicken bouillon cube

2 packages instant ramen (Do not discard seasoning)

1 handful fresh spinach

2 large eggs - soft boiled

1/4 orange pepper, sliced

1 large chicken breast, cooked and cubed

INSTRUCTIONS

  • Soft boil your eggs. (Boil water, add eggs, continue to boil for 7 minutes, remove from heat. Cool, peel and cut in half)

  • Add the oil, garlic, and onion to a sauce pot and sauté over medium for about one minute.

  • Stir in spinach until wilted

  • In a measuring cup, stir ramen flavor packets and chicken bouillon cube into HOT water.

  • Add the seasoned water to the pan (the bouillon cube may not be completely dissolved), and bring to a boil.

  • Once boiling, add the uncooked ramen noodles. Boil for about 3 minutes, or just until they are tender. Do not overcook the noodles. 

  • Transfer the soup to bowls

  • Top with orange pepper, boiled egg and cubed chicken.

  • ENJOY!
