CHEESY TATER TOT CASEROLE

Ingredients

  • 1 lb lean ground beef 

  • 1/2 onion , diced

  • 2 cloves garlic , minced

  • 15 oz can green beans and/or corn , drained *

  • 10.75 oz can condensed cream of chicken or mushroom soup **

  • 2 cups shredded cheddar cheese or Daiya dairy free Cheese ***

  • 2 cups frozen tater tots

  • Mrs. Dash Salt Free Garlic and Herb seasoning

Instructions

  1. Preheat oven to 375F.

  2. Lightly grease an 8 or 9-inch baking dish with cooking spray. Set aside.

  3. Brown the ground beef in a large skillet over medium-high heat. Drain excess fat.

  4. Add the onions and garlic to the skillet and sauté for 4 to 5 minutes.

  5. Stir Mrs. Dash to taste.

  6. Transfer ground beef mixture to the prepared baking dish and spread evenly.

  7. Top with soup, followed by corn and/or green beans, followed by the cheese.

  8. Finally, top with tater tots.

  9. Bake for 35 to 40 minutes or until tater tots are golden brown and cheese is melted.

  10. Serve immediately. 

 

This dish is very customizable to fit the needs of your family.

 

* I cannot eat corn and my son does not like green beans, so I use corn for half the pan and green beans for the other half.

** I use cream of chicken instead as my son does not like mushrooms.

*** I am lactose intolerant but my son does not like the dairy free cheese, so again I do half pan with cheddar cheese shred and the other with the non dairy cheese shreds.
