SWEET AND SPICY BAKED CHICKEN W/ PEROGIES

INGREDIENTS

  • 1 tablespoon brown sugar, packed 

  • 1 1/2 teaspoons cayenne pepper

  • 1 teaspoon Mrs. Dash garlic and herb 

  • 1 teaspoon garlic salt

  • 1/2 teaspoon onion powder

  • 1/4 teaspoon cracked black pepper

  • 2 tablespoons panko crumbs

  • 4 large chicken breasts (7oz | 200g each)

  • 1 tablespoon olive oil

 

INSTRUCTIONS

 

  • Preheat oven to 425°F 

  • Using a meat mallet, pound each chicken breast to about 2 cm at the thickest part. Make sure your fillets are all the same thickness to ensure even cooking.

  • Combine sugar, cayenne pepper, Mrs. Dash, garlic salt, onion powder,black pepper and panko.

  •  Drizzle chicken with the oil and rub seasoning all over to evenly coat. 

  • Bake chicken in preheated oven for 20-22 minutes, or until internal temperature is 165°F (75°C) using a meat thermometer. It should be golden with crisp edges.*


 

***Suggested side:

Pierogies cooked over medium heat (8 minutes each side)  in olive oil with diced onions and chopped garlic.
